2 eggs
1 tsp vanilla
3 Tbsp cocoa powder
1 tsp salt
1/2 c all purpose flour

HONEY MUSTARD INGREDIENTS
1/2 cup Dijon Mustard (IGrey Poupon)
1/2 cup honey
3 tablespoons mayo
Squeeze of fresh lemon juice

CHICKEN INGREDIENTS
4 boneless skinless chicken breast halves seasoned with salt and black pepper
8 ounces sliced mushrooms
1 tablespoon butter
4 slices bacon, cooked
6 ounces shredded Monterey Jack cheese
6 ounces shredded Cheddar cheese
Chopped fresh parsley for garnish

How to make it:

In a small bowl, combine 1/2 cup dijon mustard with 1/2 cup honey, 3 tablespoons mayo, and a squeeze of fresh lemon juice. Pour half the sauce into a small bowl, cover and reserve for later. Place the chicken in a large ziplock bag. Pour the remaining marinade in the bag and toss the chicken to coat. Chill in the refrigerator for at least two hours.
Preheat your oven to 400 degrees. In a small skillet, melt 1 tablespoon butter. Add the mushrooms and cook for 7-10 minutes, or until the mushrooms are tender and just starting to turn golden brown. Heat a skillet or grill pan to medium high heat. Remove the chicken from the marinade and season each piece with salt and black pepper. Place the chicken in the pre-heated pan. Cook for about 4 minutes, then when the chicken is golden brown, flip the chicken and cook for an additional 4 minutes. The goal here is to just sear the chicken and get a nice golden brown color on the outside. Transfer the chicken to an oven safe casserole dish. Spoon some of the mushrooms on top of each piece of chicken. Break a piece of cooked bacon in half and arrange the bacon over the chicken. Divide the Monterey Jack Cheese and the Cheddar cheese evenly and sprinkle over each piece of chicken. Place the chicken in the oven and bake for about 10 minutes (possibly longer if your chicken is really thick), or until the internal temperature of the chicken reaches 165 and the cheese has melted. Serve with remaining honey mustard sauce on the side. Sprinkle with chopped fresh parsley for garnish.

Adjust heat if steaks browns too quickly or slowly. Place on the pre-heated cooling rack and keep warm in oven. Continue cooking the remaining steaks. Keep warm in oven.
To make gravy, drain excess fat, reserving 3 tablespoons in skillet (add butter if there isn't enough). Reduce heat to medium low. Whisk in flour and cook for 1 minute or so, whisking constantly. Increase heat to medium to medium high, add milk, salt, and pepper, whisking constantly until gravy thickens. Remove from burner. Serve with steak.  Makes 6 servings.

Caramel Apple Cake with Apple Cider Frosting

Aucun commentaire :

2 cups whole wheat pastry flour
1¾ cups all-purpose flour
1 Tbsp. baking powder
1½ tsp. baking soda
1½ tsp. ground cinnamon
½ tsp. salt
1½ cups light brown sugar
¾ cup canola oil
¾ cup unsweetened applesauce
¾ cup caramel sauce (homemade or jarred)
2 tsp. vanilla extract
3 eggs
1½ cups buttermilk

Apple Cider Frosting:
7 1/2-8 cups confectioners’ sugar (to desired consistency)
3/4 cup (1 1/2 sticks) butter, softened
1/2 cup apple cider or apple juice
3/4 tsp. ground cinnamon
pinch of salt

How to mak it :

Preheat oven to 350 F. Grease and flour two (8 or 9 inch) round cake pans and set aside.
In a large bowl, whisk together whole wheat pastry flour, all-purpose flour, baking powder, baking soda, cinnamon and salt. Set aside. In a second large bowl, beat sugar and oil together with an electric mixer until well combined, about 30 seconds. Add applesauce, caramel and vanilla, beat for 30 seconds, then add eggs one at a time, beating well after each addition. Add flour mixture in three parts, alternating with the buttermilk, and continuing to beat until well combined.
Pour batter into prepared cake pans and bake until golden brown and a toothpick inserted in the middle of each cake comes out clean, about 35-40 minutes. Set aside to let cool for 10 minutes, then gently loosen cakes and turn out onto a cooking rack; set aside to let cool completely.
For the frosting, put sugar, butter, cider, cinnamon and salt into a large bowl and beat with an electric mixer until light and fluffy, about 5 minutes. Arrange one cake on a large plate and spread about 1 cup of the frosting evenly over the top. Arrange second cake on top then frost top and sides of entire cake with remaining frosting. Set aside at room temperature or in the refrigerator for at least 1 hour to allow frosting to set before serving.

Makes a tall 2-layer, 8-9 inch round cake.

White whole wheat flour can be substituted for the pastry but don't use whole wheat, it will make the cake too heavy, and we don't want to spoil this recipe at all!  Just want to thank you all for getting signed up in my followers giveaway, glad to have you among my 500!!
